EBS volumes are network drives with good but limited performance.
If you need a high-performance hardware disk, use EC2 instance store(connected directly to instance instead of network drive)
better performance in I/O.
But when you will loose the storage if you stopped the EC2 instance and start again -- ephemeral storage
They are good for buffer/cache/scratch data/temporary content
Risk of data loss if hardware fails.
Backups and Replication are your responsibilty
